Gluten Free Double Chocolate Marshmallow Cupcake

Gluten Free S’more Cupcakes

Ingredients

  • 1 cup Gluten Free Flour
  • 1 cup sugar
  • 1/2 teaspoon gluten free baking powder
  • 1/2 teaspoon salt
  • 1/3 cup gluten free cocoa powder
  • 1/2 cup coconut oil
  • 1 cup milk
  • 2 eggs
  • 1 teaspoon vanilla
  • 1/4 cup gluten free chocolate chunks I use Enjoy Life- gluten and dairy free!
  • 1/2 cup marshmallows
  • 2 cups marshmallow fluff

Instructions

  • Whisk together dry ingredients.
  • Add wet ingredients.
  • Mix well.
  • Divide into 12 cupcake cups.
  • Add 3 marshmallows, push in and cover with cupcake mix.
  • Bake at 350 degrees for 15-18 minutes.
  • Let cool.
  • Top with marshmallow fluff and brulee.

Notes

Don't add the marshmallow fluff until you are ready to serve. It's delicious, but does not set like regular frosting.
