Gluten Free Bananas Foster Waffles are a fun take on a New Orleans favorite that is perfect breakfast in bed!

Every Mom’s Dream
I am pretty sure that every mom dreams of that one day, where they sleep late and wake to a delicious breakfast, served to them on a fancy tray. Fruit, waffles, coffee, juice- the works. Of course, we all know that’s not reality, even if the breakfast in bed did happen, there would probably be quite a few dishes piled up afterward. Though for these gluten free banana foster waffles, the dishes would be worth it! Crunchy on the outside, soft on the inside and smothered in bananas cooked in a decadent bananas foster syrup. This breakfast does not disappoint.
Regardless of whether you are getting that breakfast in bed (complete with gluten free bananas foster waffles!) you still need to get a good nights sleep!
Eight Sleep Mattress

Our mattress bit the dust. So much so, that my husband back was hurting all the time, everyone was waking up cranky. When Eight Sleep offered us a mattress to review, we jumped at the opportunity. While it hasn’t gotten me breakfast in bed, I have gotten a great’s night sleep! As you can see, my little one was super excited about our new mattress. I was a bit unsure about it at first. The whole mattress came all rolled up in that small box, but within minutes it had magically turned itself into a queen-sized mattress. I thought it would take a few nights to get used to it, but that hasn’t been the case. With 4 foam layers, it is super comfy.
It has me sleeping like I don’t have a toddler crawling into bed with me in the middle of the night. No more huge dents in the mattress that I fall into. It springs right back into shape, molding your body. Heaven. I could eat breakfast in bed without spilling the breakfast all over me.
Plus, with its special construction, you don’t feel the person next to you when they move. They say it bounces like latex and conforms like foam and they are right. We are loving our new mattress. Eight Sleep also offers a really cool electronic pad that goes with the mattress. It monitors your sleep, heats the bed, all kinds of cool stuff. I haven’t tried it yet, but it’s on my list! I can’t wait to turn my mattress into a SMART mattress. My techy hubby is going to love it.
Back to the Bananas Foster Waffles
Being that I am now much more well rested than I had been, I have been working on this bananas foster sauce. The last thing I remember eating before my Celiac Diagnoses was Bananas Foster French Toast from Ihop. It was nothing compared to this. The first time I tried Bananas Foster was in New Orleans and these waffles bring back memories.
Sinking my teeth into these crisp waffles and having the bananas just melt in my mouth is what dreams are made of. These made from scratch waffles are so easy. I first made them to go with my Chicken and Waffles, but they work perfectly for this. I have a new waffle maker that I won in the Gluten Free Cookie Swap this year (Peppermint Snickerdoodles!)and it made them so crispy and tender.
The sauce is the perfect balance of sweet, with a slight bite from the alcohol. Traditionally the sauce uses rum, but bourbon works well too. It is really simple to make, just watch your heat because it can burn quickly. Gluten Free Banana’s Foster Waffles
Ingredients
Gluten Free Waffles
- 1 3/4 cup gluten free flour I prefer GF Jules
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup melted butter
- 1 1/2- 1 3/4 cup milk
- 1 teaspoon vanilla
- 2 eggs
Banana Foster Sauce
- 1/2 cup butter
- 2/3 cup brown sugar
- 1/2 teaspoon vanilla
- 2 slightly green bananas sliced
- 1/4 cup rum or bourbon gluten free
- 1/4 cup cream
Instructions
Gluten Free Waffles
- Beat together gluten free flour, salt, and baking powder.
- In separate bowl beat together melted butter, vanilla and 1 1/2 cups milk. Add eggs and beat together.
- Pour egg and milk mixture over dry ingredients and stir until combined. If mixture is to dry, add in remain 1/4 cup milk.
- Cook on heated waffle iron, according to waffle iron directions.
Banana Foster Sauce
- Melt together butter, brown sugar and vanilla over medium low heat.
- Add bananas and cook, stirring frequently.
- Gently remove bananas and set aside.
- Remove pan from heat.
- Stir in rum.
- Stir in cream.
- Cook over medium low heat until sauce coats the back of a spoon (3-4 minutes)
- Add bananas.
- Serve over waffles (or ice cream or french toast)

And good mattress IS necessary for good night sleep 😉 Well I wouldn’t complain if my hubby surprises me with breakfast in bed with this lovely waffles! Love the sound of that sauce. Breakfast in bed never happens for me because I would either get cereal or a mess of dishes like you. Who am I kidding, cereal will produce the same amount of mess in my house. I love that mattress! These waffles would make up to a bad night sleep. I am not gluten free, but just seeing how delicious they look, I might give it a try!
