There was once a time that I was obsessed with a particular sandwich….a California Turkey Club- turkey, avocado, mayo, cucumbers and provolone cheese. All the good things in life.

Since going gluten free, going on about 5 years now (hard to believe it’s been that long!), I haven’t had one. Sure I could make it on gluten free bread, but it’s just not the same. I’ve been craving one lately and when I tried Wasa’s new gluten free crackers, I thought, why not use these to recreate my favorite sandwich?

I am in love with these new gluten free flatbread crackers from Wasa. They are thick, sturdy, and don’t crumble into a hundred pieces when you bite into them, perfect for holding lots of toppings.

I had so many ideas how to top them- a Caprese salad, pizza toppings, dill cream cheese with smoked salmon, but ultimately my cravings for a California Turkey Club won out.

Luckily, Wasa’s new gluten free flatbread crackers are available at Publix, so they are super easy to find. Publix carries Wasa crackers in the section where the bread is located, not in the normal cracker section, so be sure to check there!

There are tons of varieties- but only two are gluten free. There is a Gluten Free Original and a Gluten Free Sesame and Sea Salt. There is a great store finder so you can look for them near you!

There are a few tricks to pulling off the ultimate California Turkey Club Flatbread.

First of all, season your cream cheese! Plain cream cheese just doesn’t have that savory element to it. You need to add a little flavor. Some salt, a bit of pepper and garlic powder. It doesn’t take much, but the step is essential.

Secondly, slice your veggies really thin. You want to be able to pile them on, but still be able to eat it easily. Slicing them thinly will also enable you to get a bit of each ingredient in every bite.

Thirdly, don’t be afraid to pile it on! Wasa Gluten Free Flatbread Crackers are sturdy, they can take it!

Wasa Gluten Free Flatbread Crackers are so good. If you have missed a nice strong cracker, you will love these. Pile them high with toppings and serve at a party, or even crumble them on top of some chili for a gluten free cracker that won’t get soggy.

Be sure to head to Publix and look for them!

Ingredients

  • 1 package Wasa Gluten Free Flatbread Crackers
  • 4 ounces cream cheese
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon garlic powder
  • 1 small tomato thinly sliced
  • 1 small cucumber thinly sliced
  • 1 avocado thinly sliced
  • lettuce thinly sliced
  • 4 pieces gluten free turkey
  • 4 pieces of provolone

Instructions

  • Mix together cream cheese, salt, pepper, and garlic powder well.
  • Spread over flatbread crackers.
  • Top with vegetables, turkey, and cheese.
  • Serve and enjoy!

    LOVE the idea of seasoning the cream cheese. That just immediately ups the flavour game! These crackers look like a perfect snack or thing to make for game watching!

    I haven’t seen these crackers in the stores yet. This recipe is great for a light lunch or snack….maybe afterschool snack for the kids!

    I love this idea for a light lunch! Since I make or use dairy-free cream cheese, I always add a little savory (the ingredients are naturally a touch sweet), but I never thought about that need for regular cream cheese, too. Interesting!

    Exactly our type of appetizer ! I would probably use chicken as turkey is not all that common to find in the grocery stores in South-Africa

    This looks so good! And I love that the wasa crackers would give it some crunch- that eliminates the “need” for chips or something else not-so-good for you. Great idea!
