The 3 c’s of summer desserts? Ok, maybe crispy isn’t required in a summer dessert, but cool and creamy definitely are. These Gluten Free Crispy Rice Treat Sandwiches are not your everyday ice cream sandwich. We have made homemade gluten free ice cream sandwiches before (recipe is HERE!), but this fun twist takes it to a whole other level.
I am a sucker for crispy rice treats. They are dangerously good and so easy to make. Marshmallows, some dairy free butter and a box of gluten free rice crispies and you are on your way. The number one trick to making gluten free crispy rice treats is to make sure your “Crisp Rice Cereal” is gluten free. Regular rice crispies are not.
The next super important thing to making these Gluten Free Crispy Rice Treat Sandwiches is the ice cream!

Inside these ice cream sandwiches is perfectlyfree’s Strawberry Sundae dairy free ice cream. It is the best stuff ever. Coconut ice cream with swirls of strawberry sauce. It kinda reminds me of drinking strawberry milk as a child, but much better tasting and without all the weird ingredients.
You will be happy to know that there are actual strawberries in this ice cream. If you want to go out on a limb, they also make a Fudge Swirl and Caramel Cafe that would be equally delicious in these crispy rice treat ice cream sandwiches. Maybe dipped in some dark chocolate with a sprinkle of coconut? Skies the limit when it comes to ice cream and creativity! You could even leave them undipped (my husband loved them this way, he’s not a big fan of white chocolate).
How to Make Gluten Free Crispy Rice Treat Ice Cream Sandwiches
These are so easy to make, but it is ice cream and it does need to freeze, so give yourself some time for that.
First, make your crispy rice treats. Use a jelly roll pan so that you have a thin layer. You don’t want to be biting into to thick layers of crispy rice treats. That would be impossible to eat.
Then, spread your ice cream into a smaller pan (about half the size of your crispy rice treat pan) and put it back into the freezer to freeze. You want this to be really solid. Ideally, you would do this the night before.
Once your ice cream is nice and frozen, cut your crispy rice treats into squares and cut your ice cream into squares. You could just cut the crispy rice treats in half and then place the ice cream on top, cover with the other half and then cut them, but my knife didn’t cut through that many layers well.
Once you have put together your ice cream sandwich, dip the corner in white chocolate, add some sprinkles and then put them back in the freezer until your ready to eat them.
Super easy. Once you have them all done, you can wrap them in plastic wrap and they will be good for a few weeks. Just pop one out of the freezer whenever you want!

Gluten Free Chocolate Dipped Crispy Rice Treats Ice Cream Sandwich (Dairy Free)
Ingredients
- 1 pint dairy free ice cream
- 1/4 cup dairy free butter stick
- 10 oz marshmallows
- 5 cups gluten free crispy rice
- 4 ounces gluten free/dairy free white chocolate or your favorite kind
- gluten free sprinkles
Instructions
- Spread ice cream into small pan and place into freezer to freeze solid. Preferably overnight.
- Melt butter over medium heat.
- Add marshmallows and melt together.
- Add gluten free crispy rice.
- Stir well.
- Spread onto jelly roll style baking pan.
- Let cool completely.
- Cut into squares.
- Remove ice cream from freezer and cut into squares.
- Place one square of ice cream on top of rice crispy treat and then place another on top.
- Dip corner in melted chocolate and add sprinkles.
