Super simple, super flavorful, easy gluten free Caprese Bruschetta. Perfect for a summer lunch or an appetizer!

During the summer I’m all about light refreshing meals, which is why I love this Caprese Bruschetta. I know usually bruschetta is served on a baguet style bread, but this MaxOmega 5 Seed bread from Three Bakers works really well in this.
I love the texture, plus I love that it has the Omega Threes. No matter how many times I try to feed my kids salmon they won’t eat it, but they love this bread.
Gluten Free Caprese Bruschetta
It’s such a simple dish, the flavor combo is perfect. I’m always a sucker for a balsamic glaze (I buy it, but it can definitely be made at home). Combine that with tomatoes, fresh mozzarella and basil, it’s a home run.
One tip for making your gluten free caprese bruschetta even better, is to add a sprinkiling of Italian seasoning and salt. It really helps to bring out the flavors.

Gluten Free Caprese Bruschetta
Ingredients
- Three Bakers MaxOmega Bread
- Thinly sliced tomato
- Sliced fresh mozzarella
- 1-2 teaspoons olive oil
- 1 Tablespoon gluten free balsamic glaze
- ½ teaspoon Italian Seasoning
- ¼ teaspoon salt
Instructions
- Toast bread lightly.
- Top with tomato and mozzarella.
- Sprinkle with Italian seasoning and salt.
- Drizzle balsamic glaze and olive oil over toast.
