I Scream, You Scream, We All Scream for Ice Cream
Nothing says summer time like ice cream treats. I’ll be honest, I haven’t had an ice cream sandwich since my Celiac diagnoses. To my knowledge, there aren’t any gluten free ice cream sandwich brands. That’s the trick to gluten free- you gotta learn to make a lot of things yourself and usually you can come up something that’s just as good- or in this case, even better!
New Perfectly Free Pints
I love perfectly free frozen bites. The creamy coconut ice cream center and the delicious outsides are amazing. I was so excited when they came out with pints. They come in three flavors- fudge stripe, caramel cafe, and strawberry sundae. All are delicious, but for this gluten free ice cream sandwich, I chose to use the fudge swirl and caramel cafe. The fudge swirl is a bit more of a coconut ice cream flavor, whereas the caramel cafe has this delicious coffee taste with that caramel swirl.

The Perfect Gluten Free Ice Cream Sandwich
When most people make a DIY Gluten Free Ice Cream Sandwich, they usually use cookies, which of course are good, but if memory serves me correctly, an ice cream sandwich has that cakey cookie outside. When I wanted to remake it, I wanted to recreate that same cakey cookie. This gluten free ice cream sandwich has that perfect texture that will remind you of childhood summers, eating ice cream sandwiches by the pool.
Recipe Notes
This is a really simple recipe. I took my basic gluten free brownie recipe and spread it thinly on a baking sheet. It makes the perfect outside for these gluten free ice cream sandwiches.
The Cakey Cookie Brownie
- The trick is to not bake it too long. If you do you end up with brownie “chips.” They taste good but don’t make good gluten free ice cream sandwiches.
Gluten Free Flour
- For this particular recipe, I have tried several different gluten free flour blends and they all work well. GF Jules is my go to, but I’ve also used Trader Joes and King Arthur and they both work well.
Dairy Free
- I have used both vegetable oil and coconut oil for these, both work well.
Off Set Spatula
- This works best for spreading the batter into an even, thin layer, but in a pinch, a spatula can work.

DIY Gluten Free Ice Cream Sandwich {Gluten & Dairy Free!}
Ingredients
Brownie Layer
Dry Ingredients
- 1/2 cup gluten-free flour
- 1/3 cup gluten-free cocoa powder
- 3/4 Cup Sugar
- 1/4 tsp salt
- 1/4 tsp baking powder
- 1 tsp gluten-free instant espresso powder optional
Wet Ingredients
- 2 eggs room temperature works best
- 1/2 cup coconut oil
- 1 tsp vanilla
Ice Cream
- 2 Pints Dairy Free Ice Cream
Instructions
Brownie
- Preheat oven to 350 degrees
- Mix together dry ingredients.
- Add wet and stir well.
- Cover cookie sheet with parchment paper.
- Spread brownie mixture in thin layer.
- Bake for 10 minutes, turning half way through.
Ice Cream
- Let ice cream soften for about 10 minutes.
- Cover a small pan with parchment paper (about half the size of your brownie layer)
- Spread softened ice cream.
- Place in freezer to harden.
Prepare Gluten Free Ice Cream Sandwiches
- Let brownie layer cool.
- Cut in half.
- Carefully remove ice cream and place on top of cookie layer. Cover with second layer.
- Carefully cut into individual sandwiches.
- Wrap in plastic wrap and freeze.
