Summer Veggie Zoodles with Red Pepper Lemon Vinaigrette is the perfect way to add a little heat to your summer, without heating up the kitchen!

One of my favorite things about summer is the fresh vegetables that come in season! Zucchini, squash, and tomatoes are widely available and are tasting delicious! I was recently introduced to the world of zoodles. I know, I’m a little behind the times, but I thought they were much more difficult to make than they are. If you are new to zoodles like me, follow Wholesome Yum’s guide How to Make Zucchini Noodles. You’ll be a pro in no time.
So much fun to make and eat! While I cook them from time to time, with the summer heat I prefer to avoid the kitchen as much as possible. Toss raw zoodles with red pepper lemon vinaigrette, some cherry tomatoes and top with a little bit of herbed ricotta. It’s amazing!
Spice Up Summer
Just because you don’t want to turn on the oven doesn’t mean you don’t want a bit of heat! I love dressing my zoodles with red pepper lemon vinaigrette. It brings just the right amount of heat.

Summer Veggie Zoodles With Red Pepper Lemon Vinaigrette
Frontier Co-op’s Organic Crushed Red Chili Pepper is new this summer. It adds the perfect peppery heat to dishes. Combined with lemon, olive oil, and Frontier’s Onion Flakes, it makes the perfect vinaigrette. Store it in a mason jar so you have it ready whenever the mood strikes!
By tossing summer veggies in the vinaigrette, you have the perfect, healthy lunch. I topped mine with a little bit of ricotta mixed with Frontier Co-op’s oregano and garlic powder. It’s a simple meal packed with flavor. My husband, who isn’t a fan of zucchini or squash, loved it!
Final Notes
This dish is a must for summer! The crushed red pepper and lemon provide a flavor combo that is hard to beat. The zoodles provide the perfect blank slate to hold all the flavor.
If you’re looking to add a little bit of protein, a bit of chicken would be a nice addition. Try marinating it in the red pepper lemon vinaigrette! Another great topping for this would be Homemade Pasta Pomodoro Sauce from Evolving Table.

Summer Veggie Zoodles with Red Pepper Lemon Vinaigrette
Ingredients
Red Pepper Lemon Vinaigrette
- 1/2 cup olive oil
- 1/4 cup lemon juice
- 2 teaspoons red pepper
- 1 teaspoon dried onion flakes
- 1/2 teaspoon salt
Herbed Ricotta
- 1/4 cup ricotta cheese
- 1 teaspoon dried oregano
- 1/2 teaspoon garlic powder
Veggies
- 1 zuchinni zoodled
- 2 squash zoodled
- cherry tomatoes halved
Instructions
- Mix all dressing ingredients together in a jar. Shake will.
- Mix herbed ricotta ingredients.
- Toss zoodles and tomatoes with 1- 2 Tablespoons vinaigrette.
- Top with herbed ricotta.
