A Valentine’s Day Classic

Nothing says Valentine’s Day like chocolate. It’s almost as if it was a holiday created just to celebrate chocolate in all forms (and who can argue with a holiday that celebrates chocolate!). One of my husband’s favorite restaurant desserts is Molten Chocolate cake. It’s so rich and chocolaty, plus that oozy center. It’s what dreams are made of. I honestly always thought that it was difficult to make….one of those dishes you only get when eating out, but I was wrong- it is beyond easy!

Gluten and Dairy Free Molten Chocolate Cake

The basic recipe for molten chocolate cake is pretty simple. Chocolate, butter, eggs and sugar (plus a tiny bit of flour to pull it together!)….with just a few swaps and a bit of help from Enjoy Life Foods dark chocolate morsels, making this classic recipe gluten and dairy free was a snap. It is ready in about 15 minutes making it the perfect weeknight dessert.

Tips and Tricks to the Perfect Gluten Free Molten Chocolate Cake

This cake is quick and easy to pull together. Start by melting together dairy free butter and Enjoy Life Foods chocolate chips. I prefer the dark chocolate, but the semi-sweet work as well. Follow by mixing in powdered sugar, eggs and a little bit of gluten free flour and you have perfection!

Be careful that the chocolate is cooled before adding the eggs, you don’t want a scrambled mess.

The cakes need to cook 8 to 10 minutes or until the edges look cooked and the center looks a bit underdone. That center is what makes the gooey chocolate. If you over cook them, they taste great, but won’t have the oozy effect.

It still amazes how fast this restaurant style dessert is to put together. Perfect for date night or when your craving chocolate.

Gluten and Dairy Free Molten Chocolate Cake for Two

Servings: 2

Ingredients

  • 1/4 cup dairy free butter
  • 2 ounces dark chocolate
  • 1/3 cup powdered sugar
  • 1 whole egg
  • 1 egg yolk
  • 1/4 teaspoon vanilla
  • pinch of salt
  • 1 Tablespoon gluten free flour

Instructions

  • Preheat oven to 400 degrees.
  • Grease to small ramekins.
  • Melt together dairy free butter and chocolate in a small bowl.
  • Add in powdered sugar.
  • In a seperate bowl, whisk together eggs, vanilla, and pinch of salt.
  • Add to chocolate mixture.
  • Carefully fold in one tablespoon of gluten free flour.
  • Bake in ramekins 8 to 10 minutes
  • Place upside down on a plate and let cool for one minute.
  • Remove ramekin (carefully, it's hot!) and enjoy!
