Gluten Free Cheesy Chicken Cordon Bleu
Chicken cordon bleu is an American classic. Traditionally chicken breast is pounded thin, then rolled with ham and cheese, dipped in egg and bread crumbs and fried, which is delicious, but a bit complicated to make.
This easy version has a fun twist with a gluten free cheese cracker crust and I’ve made it a bit easier by butterflying the chicken and stuffing it, rather than pounding it out.

Gluten Free Chicken Cordon Bleu Tips
This recipe is really straight forward (watch the video to see just how easy it is!)
One thing I have done that is a bit different is the egg dip. Instead of dipping in egg, then flour, then egg and crumbs, I just mixed it all together and it worked great! I like to use GF Jules for my gluten free flour.
You may be tempted to leave out the mustard, but don’t. My husband hates dijon, but couldn’t tell it was dijon mustard, only that it had really good flavor.
What really makes this easy is that you butterfly the chicken and stuff it, rather than trying to pound it out and roll it. Makes a world of difference in the amount of time this takes to make!
Finally, I baked it instead of frying it. The Three Bakers gluten free cheese snackers give it such a nice crispy crust without the need to fry.

Gluten Free Cheesy Chicken Cordon Bleu
Ingredients
- 2 chicken breasts butterflied
- salt and pepper
- 1 package Three Bakers Gluten Free Cheese Snackers crushed
- 2 eggs beaten
- 2 Tablespoons Dijon Mustard
- 1/4 cup gluten free flour
- 4 slices thin sliced ham
- 4 slices Swiss or provolone cheese
Instructions
- Preheat oven to 350.
- Sprinkle chicken breasts with salt and pepper.
- Beat together eggs, dijon mustard and gluten free flour.
- Make two rolls with two pieces of ham and two pieces of cheese each.
- Stuff inside chicken and use toothpicks to close.
- Dip chicken in egg mixture and then in crushed cheese crackers.
- Bake at 350 for 45 minutes to an hour, or until chicken reaches a temperature of 165 degrees.
