Gluten Free Cheesy Chicken Cordon Bleu

Chicken cordon bleu is an American classic. Traditionally chicken breast is pounded thin, then rolled with ham and cheese, dipped in egg and bread crumbs and fried, which is delicious, but a bit complicated to make.

This easy version has a fun twist with a gluten free cheese cracker crust and I’ve made it a bit easier by butterflying the chicken and stuffing it, rather than pounding it out.

Three Bakers Snackers

If you have been missing snacks like Goldfish and Teddy Grams, Three Bakers has your back with their gluten free snackers line.

Our favorite is the cheese crackers, my toddler loves when she comes home and we have these for a snack. They also come in chocolate, chocolate chip, and honey gram. Perfect for school snacks or to create fun recipes. Be sure to head over to the Three Bakers site for more recipes using snackers!

Gluten Free Chicken Cordon Bleu Tips

This recipe is really straight forward (watch the video to see just how easy it is!)

One thing I have done that is a bit different is the egg dip. Instead of dipping in egg, then flour, then egg and crumbs, I just mixed it all together and it worked great! I like to use GF Jules for my gluten free flour.

You may be tempted to leave out the mustard, but don’t. My husband hates dijon, but couldn’t tell it was dijon mustard, only that it had really good flavor.

What really makes this easy is that you butterfly the chicken and stuff it, rather than trying to pound it out and roll it. Makes a world of difference in the amount of time this takes to make!

Finally, I baked it instead of frying it. The Three Bakers gluten free cheese snackers give it such a nice crispy crust without the need to fry.

I’m sure you are going to love this as much as we do. If you can’t find Three Bakers Snackers close by you, they can be ordered online through their website!

Of course…any great main course needs great sides! Why not try these Roasted Stokes Purple Sweet Potatoes from Running to the Kitchen or these Garlic Roasted Cherry Tomatoes with Garlic, Basil and Balsamic Glaze from The Endless Meal!

The Gluten Free Cheese Chicken Cordon Bleu and these sides will be one amazing dinner!
