It’s that time of year where everything is coming up pumpkin spice and people are starting to think of easy breakfast and brunch recipes to share with all their visiting family. Casseroles are one of my favorite things to serve because they are just so easy and I get to spend more time with friends and less time in the kitchen!
This gluten free pumpkin spice french toast casserole is a snap to throw together and can be made ahead if you like!
Schar Artisan Bread
Schar bread has been one of my favorites from day 1 of eating gluten free. It doesn’t get soggy, it tastes great, and I don’t need to toast it to make it edible (if I have to toast bread, that’s a deal breaker for me!), which is one of the reasons I love it for french toast.
It has the ability to soak up all the custardy goodness, without becoming a soggy mess.
At any given point there is at least 2 loaves of Schar Artisan Bread in our kitchen. They use stay fresh packaging, so I’m able to stock up without taking up room in the freezer or worrying about it going bad.
This also makes it great for hurricane and blizzard supplies (I’m assuming people keep blizzard supplies like we do hurricane? If not feel free to correct me in the comments!).
Gluten Free Pumpkin Spice French Toast Casserole
Just one bite of this casserole and you will be hooked! I chose not to add syrup because the brown sugar topping seemed to provide enough sweetness for me, but feel free to cover this pumpkiny goodness in syrup if you like! A bit of whipped cream would also be great!
Be sure to give the bread plenty of time to soak, otherwise, you end up with a layer of custard on top of bread. Not quite what we are looking for! If you so desire you can make this the night before and bake it in the morning.

Pumpkin Spice French Toast Casserole
Ingredients
- 1 loaf Gluten Free Bread
- 6 Eggs
- 1 1/4 cups milk
- 1 cup pumpkin puree
- 2 teaspoons pumpkin spice
- 1/4 cup brown sugar
Topping
- 2 Tablespoons butter
- 1/4 cup brown sugar
- 2 Tablespoons gluten free flour
Instructions
- Whisk together eggs, milk, pumpkin puree, pumpkin spice and brown sugar in a large bowl.
- Add bread and let sit for at least 30 minutes.
- Place bread in a buttered 9 x 13 baking dish.
- Mix together topping ingredients and sprinkle over top.
- Bake at 350 degrees for 30-40 minutes or until cooked through.
