The beginning of fall means the beginning of everything pumpkin. From lattes to muffins, pumpkin spice gets everyone into the fall mood. Without being to cliché, I love the pumpkin spice time of year. All the scents of cinnamon and nutmeg wafting through the air. It almost makes me forget that it is still 95 degrees outside.
Frontier Bites
One of my new favorite snacks is Frontier Bites. They are crunchy, slightly sweet, and full of wholesome ingredients. I am so excited that they are available at Publix. Plus, they are very affordable!
They come in 3 flavors, but my husband’s favorite is the Pecan Cherry Cinnamon. What better flavors to combine with a Gluten Free Pumpkin Spice Mousse?
The crunchy bites with the creamy mousse are a perfect match.
Gluten Free Pumpkin Spice Mousse
I love mousse. It’s a great dessert because it isn’t super sweet but still satisfies that after-dinner sweet tooth craving. Normally I make mousse with eggs and heavy cream, but I wanted to make a mousse that is a bit on the healthier side, so I made a few adjustments to make it egg, dairy, and gluten free. Not only is this mousse delicious, it is also very simple. Just a handful of ingredients, but it is so yummy you will definitely want seconds. Layered with crunchy Frontier Bites, this gluten free pumpkin mousse is a beautiful dessert to eat on your own or serve to company. Plus, since it is free of most allergens (except nuts!), you can almost guarantee all your guests can enjoy it.
Recipe Notes
Coconut Cream
Instead of using heavy cream, I used whipped coconut cream. If you aren’t a fan, you could always sub in regular whipped cream. In order to have enough cream for this, you will need 2 cans of coconut milk or about 1 cup of coconut cream (you can buy coconut cream by itself). Be sure that you refrigerate it overnight or it will not whip up.
Pumpkin Spice
Feel free to add more as you see fit, just keep in mind that you do not want to overpower the gluten free pumpkin spice mousse.

Frontier Bites Pumpkin Mousse
Ingredients
- 1 Bag Frontier Bites
- 1 can pumpkin puree
- 1/2 cup brown sugar
- 2 teaspoons pumpkin spice
- 2 cans chilled coconut milk or 1 cup chilled coconut cream
Instructions
- Heat pumpkin puree, brown sugar and pumpkin spice until brown sugar is melted into pumpkin. About 3-4 minutes over medium low heat.
- Remove from heat and allow to cool while making Coconut Whipped Cream.
- Whip coconut cream until it begins to form small peaks. Reserve about a quarter cup for topping.
- Fold pumpkin mixture into coconut cream.
- Crush Frontier Bites.
- Layer frontier bites and mousse. Top with remaining cream and Frontier Bites.
