Quick & Easy Gluten Free Apple Crisp
I am a huge lover of gluten free apple desserts. Last year I introduced you to Inside Out Apple Crisp, and this year I just had to bring a new easy gluten free apple crisp version your way!
Individual desserts are my favorite. Especially ones you can make ahead, like these. Just reheat them in the oven. Of course, my husband ate two of them cold and thought they were terrific, so if you don’t feel like reheating, they are great anyway!
What makes these little darlings so easy is that I use pre-made cookies for the crust. Now, you could go with a certified gluten free oatmeal cookie. I’m sure they would be delicious, but I chose to use Goodie Girls Toffee Crunch. I love the bits of toffee, and there are even some chocolate chips scattered in there. They make the perfect bite.
The trick is to not pulverize the cookies in the food processor, but just crunch them up. A little bit of butter and brown sugar will hold them together nicely. This recipe makes quite a bit of crust. You can add as much or as little as you like. I loved topping them with a bit of vanilla ice cream, hubby preferred them without it. It’s entirely up to you!
Honestly, this little dessert took no time to throw together. Just a few ingredients apples, brown sugar, cinnamon, lemon juice, salt, butter, and cookies. You probably have all these things sitting in your kitchen already!

Individual, Quick & Easy Gluten Free Apple Crisp
- 3 cups chopped apples
- 4 Tablespoons butter
- 1/3 cup brown sugar
- 1 teaspoon cinnamon
- 1 Tablespoon lemon juice
- 1/4 teaspoon salt
- 1 cup crushed gluten free cookies
- 2 Tablespoons melted butter
- 2 Tablespoons brown sugar
- Combine apples, 4 Tablespoons butter, 1/3 cup brown sugar, cinnamon, lemon juice, and salt in a saucepan.
- Stir over medium heat until butter is melted.
- Cook for 5 minutes over medium low heat.
- Divide into 4 ounce canning jars or small dishes.
- Combine cookies, 2 Tablespoons melted butter and 2 Tablespoons brown sugar in food processor until just combined.
- Divide between jars.
- Bake at 350 degrees for 10 minutes.
