Throwback Lunches

I’m a child of the ’80s and I gotta tell you, I think I missed most of the fun lunches. As a kid, I actually refused to eat sandwiches, so I mostly got crackers or snacks in my lunches. I actually ate a lot of cold spaghettios as well. Go figure.

Due to my refusal to eat sandwiches, I was an adult before I ever discovered Uncrustables. When I ran summer camps (in my previous life- B.C- before children), we would freeze them and take them for lunches on field trips. Super handy.

This recipe is equally handy. With just a little bit of elbow grease, you can make a stack of Homemade Gluten Free Uncrustables for your freezer, ready to be pulled out and put in a lunch at moment’s notice.

Three Baker’s Large Slice Gluten Free Bread

The trick to making a gluten free uncrustable is large sliced bread. Gluten free bread tends to be small, for a homemade uncrustable you really need a larger slice, otherwise, there is no room in the middle for all the good stuff.

Three Baker’s new Large slice white bread is perfect for these. It is soft and doesn’t break, which is huge, but it is also big enough to get a normal-sized sandwich!

Homemade Gluten Free Uncrustables

These homemade gluten free uncrustables are super easy to make and easily customizable. I used the traditional peanut butter and jelly, but you can use whatever you like- almond butter, sun butter, cream cheese, the sky is the limit!

In order to get that “uncrustable” round shape with a crimped edge, I used a sandwich press, but a large mouth jar would work or just about any kind of sandwich press.

One trick that is super important for making these gluten free uncrustables is to spread the peanut butter on both sides of the bread and put the jelly in the middle. The peanut butter will provide a barrier to keep the jelly from seeping through the bread.

Gluten Free Uncrustables

Ingredients

  • 2 slices Gluten Free Large Slice White Bread
  • 1 Tablespoon gluten free peanut butter or sunbutter or other favorite butter
  • 2 teaspoons gluten free jelly

Instructions

  • Spread peanut butter in the center of both side of the bread.
  • Spread jelly on top of the peanut butter.
  • Place sandwich sides together.
  • Using a sandwich press or a large-mouthed cup, press into the sandwich, removing the edges and sealing the sides.
  • Freeze until ready to eat.
