As a mom, breakfast time tends to be hectic. It’s hard to get everyone fed and out the door. Often, I am lucky to just get a cup of coffee before I am off to start the day. Lucky for me, once every two weeks I go to MOPS, where I spend time with other moms and we have a great breakfast spread.Skip the cereal and make a filling breakfast casserole for the week! Now, if you have Celiac or Gluten Sensitivity, enjoying meals out can be a struggle. I am lucky enough to be part of a group who has several women with allergies, so everyone is very allergy aware. As part of the breakfast spread, there are always one or two gluten free dishes. Cooking gluten free can be a bit intimidating for those who are not gluten free or just learning. I created this round up for a selfish reason- I want to try all these recipes! Hopefully though, not only will I get to eat all these amazing recipes at MOPS this year, these will give you some great ideas for make-ahead breakfasts as well!
Side Bar: If you are a mom of a child under the age of 5 or pregnant, find your local MOPS group. I can’t guarantee there breakfast will be as good as ours, but the support of other moms who have already been there is invaluable. No one understands mothering like another mom. Side bar over.
