Chocolaty Goodness
As a child I loved when I would find fudgy, chocolate coated Little Debbie Christmas Tree brownies in my lunch box. I mean really, who doesn’t like them?
Brownies are one of my favorite desserts. They are the first thing I learned to make gluten free. While I love making them from scratch, with a almost 4 year old and being 33 weeks pregnant, I’m a sucker for a mix. Anything that makes life just a bit simpler. Plus, then I can spend time decorating them. Brownies are so much faster to make then Christmas cookies and you can still easily decorate them!
Enjoy Life Chocolate
Our favorite gluten free chocolate is Enjoy Life. I love their mixes, baking chocolate and their chocolate bars. (Perfect for semi-homemade recipes like this gluten free/dairy free monkey bread!) All so good…my little one is a little spoiled and has become a bit of a chocolate snob, since we always have Enjoy Life Chocolate on hand.
I love to use their mixes when we are going to be sharing with others. They are allergy friendly, so it means there is something for everyone to enjoy.
Chocolate Covered Holiday Brownies
These are super simple to make. I started with Enjoy Life Foods Brownie Mix and baked it in a 9 x 13 pan instead of 8 x 8 to make them a little bit thinner. After they have cooled, use your favorite cookie cutters to cut shapes and spoon melted chocolate over them.
I like to add a bit of coconut oil to the chocolate to help it smooth out.
I let them dry overnight and then decorated with icing and sprinkles, but you could totally add sprinkles while they are still wet and skip the icing completely.
Simple to make and everyone will just go crazy for them (plus the Enjoy Life Brownie mix only needs water and oil added! Super easy!)

Gluten Free and Dairy Free Fudgey Chocolate Dipped Holiday Brownies
Ingredients
- 1 Box Gluten Free/Dairy Free Brownie Mix prepared according to package directions
- 10 ounce gluten free baking chocolate
- 1 Tablespoon coconut oil
- Icing/Decorations
Instructions
- Prepare and bake brownie mix in 9 x 13 pan. Reduce baking time if necessary to accommodate a larger pan.
- Allow to cool completely.
- Cut with cookie cutters.
- Melt chocolate with coconut oil until smooth (small increments in the microwave at half power or over a double boiler.)
- Place brownies on a cooling rack over parchment paper.
- Spoon chocolate over brownies, allowing to drip down the sides.
- Decorate with sprinkles or let dry and then decorate with icing and sprinkles.
