Cheesecake Love

I believe it was the Christmas after I was diagnosed with Celiac that I decided to try making a cheesecake to take to friends for dessert. I’ll be honest the first attempt wasn’t great because I forgot to let the cream cheese soften fully, but the second attempt was successful. There was no crust, because I hadn’t yet learned enough about being gluten free to make one, but everyone liked it.

Since then I have done multiple cheesecakes. I’ve finally mastered my baked one (I’ll post it at some point), but no bake cheesecake is so much easier! Especially if it’s hot like it is down here. When I was trying to figure out what to make with Goodie Girl’s fudge stripe cookies, I realized they fit perfectly into a cupcake wrapper- and these little desserts were born!

Gluten Free Fudge Striped Cookies

When I was a kid I loved ring shaped cookies. I put them on my finger and would nibble the edges till it finally broke and could gobble up the little bits that were left.

Goodie Girl’s Fudge Stripe Cookies remind me of that time- and they are one of our favorite Goodie Girl Cookie flavors. A box of these can disappear in a flash at our house- and it’s not the gluten free people eating them, it’s our gluten loving friends who devour them.

I can’t tell you how excited they were when they found out I was combing Goodie Girl’s Fudge Stripe Cookies with a no bake cheesecake. It really doesn’t get much better than this.

No Bake Cheesecake with Fudge Cookie Crust

I already said this, but my favorite thing about this recipe is it is so easy. Occasionally I love making complicated things, but overall I’m a lazy baker/ dessert maker. I want to spend the least time in the kitchen possible and make the least mess possible.

Dishes are my nemesis. I hate them with a passion. This recipe only requires me to wash one bowl, one measuring cup, and one spoon. I can handle that. Ok. and some beaters, but really it’s very minimal. I can handle it. My three year old can handle it. It’s just a couple dishes. I digress.

As I was saying. this dessert is so easy to make. Beat all the cheesecake ingredients together, top the cookies with it and freeze. Don’t worry, it won’t taste frozen. It starts to thaw into that creamy cheesecake texture practically the second you pull it out of the freezer.

My number one tip for this recipe is to make sure your cream cheese is softened and whipping cream is cold.

Gluten Free No Bake Cheesecake with Fudge Cookie Crust

Ingredients

  • 8 ounces softened cream cheese
  • 1/3 cup cold whipping cream
  • 1 cup powdered sugar
  • 1 teaspoon vanilla
  • 6 fudge striped cookies

Instructions

  • Beat together cream cheese and whipping cream.
  • Beat in powdered sugar and vanilla.
  • Place cookies inside paper muffin cups, inside of a muffin tin.
  • Top cookies with cheesecake mixture.
  • Freeze for at least 2 hours.
  • Top with fresh strawberries or other fruit.

      So good, and they are vegan, if you use dairy free cream cheese you could make them dairy free!
