Lunch Dilemma
I’m always on the lookout for new, easy, delicious lunch recipes. I work from home and I get bored of leftovers every day. This recipe started out as a marinade for chicken a few months ago. I always love making dressings to marinade chicken in and this Cilantro Lime Honey dressing is phenomenal. Unfortunately, it didn’t quite work well as a marinade. The delicacy of flavors was lost in the cooking process, so I decided to switch it up.
You can always drizzle the Cilantro Lime Honey dressing over a salad, it’s delicious, but tossing it with some mayo and the dressing? Divine. In lettuce cups, it’s the perfect light lunch.
Cilantro Lime Honey Dressing
I love homemade dressings. My best friend and I used to make a basil honey dressing (I NEED to find that recipe), that was so good, but my husband is allergic to basil, so I started making this version with cilantro. It’s so good. The perfect balance of sweet and tangy. I like to add a bit of chili powder for heat, but you could also add a little bit of jalapeno instead.
The dressing is simple, just through it all in a magic bullet and its ready. It will store for quite a bit of time in the refrigerator.

Cilantro Lime Chicken Salad
After you’ve blended up this amazing dressing, it’s as easy as mixing a few tablespoons of cilantro lime honey dressing with mayo (you could even make this Homemade Mayo from Everyday Maven), chicken, and I like to add some pecans or walnuts.
This salad is perfect to serve in butter lettuce cups with some fresh tomato. If it strikes your fancy, you can always put it on some gluten free bread or just eat it by itself. I’ve been known to keep a container in the fridge to snack on.

Easy, Cilantro Lime Chicken Salad Cups
Ingredients
Cilantro Lime Honey Dressing
- 1/4 cup olive oil
- 1/4 cup lime juice
- 3 Tablespoons honey
- 1 cup cilantro leaves
- pinch of salt
- pinch of pepper
- 1/2 teaspoon chili powder
- 1 clove garlic
Cilantro Lime Chicken Salad
- 2 cups chopped chicken breasts
- 3 Tablespoons Cilantro Honey Lime Dressing
- 2-3 Tablespoons Mayo
- 2 Tablespoons chopped walnuts or pecans
- salt and pepper to taste
- butter lettuce
- chopped tomato
Instructions
Cilantro Lime Honey Dressing
- Place all ingredients in a blender.
- Blend until well combined.
Cilantro Lime Chicken Salad
- Toss cilantro lime honey dressing, mayo, and chicken together.
- Fold in chopped nuts, if using.
- Serve in lettuce cups with chopped tomato.
