Gluten Free Ice Cream Cake with a crunchy chocolate cookie layer is the perfect birthday party addition or summer treat!

Birthday Season
It’s birthday season at our house. That time of year where it feels like there is a birthday every week (probably cause there is!). One of our favorite things to have for birthday’s is ice cream cake! I mean, who doesn’t love a slice of ice cream cake?
I have always been a Carvel style fan. I like a cookie crunch layer better than a cake layer. My husband’s birthday is next in the docket and he loves ice cream cake even more than I do, so I had to work up a gluten free ice cake for his birthday.
Since he isn’t gluten free (except at home, because I refuse to cook multiple meals and risk getting myself sick), I had to make sure it was good enough that no one could tell it was a gluten free ice cream cake.
Midnight Brownie Goodie Girl Cookies
Ever since I first tried Goodie Girl’s Midnight Brownie Cookies, I knew they were begging to be made into an ice cream cake. When it comes to gluten free cookies Goodie Girl makes some of my favorites.
I love them mainly because no one can ever tell that they are gluten free. I take them to parties, my child takes them to school (they are peanut free as well!) and people gobble them up without ever knowing they are gluten free cookies. Plus, their new packaging it awesome! I am loving the box better than the bag, less crushed cookies.
The intense chocolate flavor, coupled with chocolate chips throughout, makes for the perfect chocolate fix! Bonus- they are 15% off this month! Perfect time to stock up.
Easy as Gluten Free Ice Cream Cake
This Carvel-Style Gluten Free Ice Cream Cake is a snap to make. The hardest part is the wait. This isn’t a cake you can make the same day you need it. It takes at least overnight to firm up.
If you want it to actually look like a cake, you will need a springform pan, but if you could also make this in a 9×13 pan and it will be equally delicious and much easier to decorate!
For the icing I just used cream whipped with powdered sugar, but I cheated on decorations and used a white icing. It was much easier to work with, I tried piping with whipped cream and it just didn’t look as pretty!

Gluten Free Ice Cream Cake {Carvel Copy Cat}
Ingredients
- 1 quart Gluten Free Vanilla Ice Cream
- 1 quart Gluten Free Chocolate Ice Cream
- 2 boxes Gluten Free Chocolate Cookies crushed (I use Goodie Girl Midnight Brownie
- 2 cups sweetened whipped cream or cool whip works as well
Instructions
- Cover bottom of spring form pan with foil.
- Take out Vanilla Ice Cream to soften for at least half an hour or until spreadable, but not melted.
- Spread in bottom of pan. Ice cream should come to just under the half way point.
- Place in freezer and take out Chocolate Ice Cream to soften for half an hour.
- Remove cake from freezer and spread crushed gluten free chocolate cookies. Be sure to make a decent sized layer. Lightly pat down.
- Carefully spread Chocolate Ice Cream over cookie layer.
- Place in freezer at least overnight.
- Remove from spring form pan and use whipped cream to ice the gluten free ice cream cake.
- Return to freezer for an hour or until ready to serve.

July 26, 2018 at 2:12 pmHi, I didn’t use any on the bottom, that’s just a few crumbs that fell. I used a 9 inch spring form pan, but you can also make this is a 9×13, you just won’t get those pretty side cuts. Enjoy!
