Gluten Free Brownie Cups

I love brownies. They were one of the first things I learned to make gluten free and are always my go-to when guests come by. It’s easy to whip up a batch and they are both gluten and dairy free!

Once you’ve mastered brownies, it’s only natural that brownie sundaes come next! These little brownie cups are perfect for single serving ice cream sundaes. I topped them with perfectly free’s mint chocolate bites and it’s a no mess treat that anyone would love! No spoon required!

Frozen Bites

I love perfectly free’s frozen bites. They are a great little snack. Top 8 allergen free and low in calories. There are 7 different bite flavors now! Honestly, I love them all. They are creamy on the inside and I love the outside coating.

Even my husband, who is not a fan of coconut, likes their coconut cream centers.

Perfectly Free Mint Chocolate frozen bites

I love the mint flavor, especially for winter months. There is something about winter that just calls for all things mint. I know most people don’t immediately think ice cream as the cooler months approach, but in South Florida, winter consists of it getting down to 70, so we like to enjoy our mint in ice cream form!

Party-Ready

Gluten Free Brownie Cups are perfect for parties. Make a tray ahead and put them in the freezer. Just pull them out when you’re ready. The holiday season is perfect for mint and chocolate, but you aren’t limited. Brownie cups with perfectly free cherry frozen bites would be fun for Valentine’s Day. You could even fill them with some of perfectly free’s dairy free pints if you wanted to make a variation!

Gluten Free Brownie Cups

Gluten Free Brownie Cups are the perfect platform for all your favorite ice creams!
Prep Time10 minutes
Cook Time15 minutes
Total Time25 minutes
Servings: 24 mini cups

Ingredients

  • 1 cup gluten free flour
  • 3/4 cup sugar
  • 1/3 cup cocoa powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 2 eggs
  • 1 teaspoon vanilla
  • 1/2 cup vegetable or coconut oil
  • Perfectly Free Frozen Bites or other ice cream

Instructions

  • Preheat oven to 350 degrees.
  • Mix together dry ingredients.
  • Add eggs, vanilla, and oil.
  • Stir well.
  • Place heaping tablespoons in mini muffin pan.
  • Press down centers using back of tablespoon.
  • Bake at 350 degrees for 12-15 minutes.
  • Let cool 5 minutes before removing from pan.
  • After completely cooled, add frozen bites or ice cream.

    I CANNOT believe these are gluten free! I say that a lot with gluten free recipes because they look so good haha! Yum!
